Ah, fresh tomatoes are back! Yeah! The local fruit stands are full of fresh summer veggies again. So I had to immediately go and get the ingredients for this, my fav summer recipe.Tomato Mozzarella Toast
2 lbs fresh tomatoes
1/4 cup olive oil
1/3 cup slivered fresh basil or chopped parsley
1 tsp minced garlic
1/2 tsp salt
1/8 tsp black pepper
two 8-inch long Italian rolls
8 thin slices Prosciutto or ham
1 cup (8 oz) mozzarella cheese
Preheat broiler. Core and chop tomatoes (about 5 cups.) Combine tomatoes, 2 tbsp of olive oil, basil, garlic, salt and pepper. Let stand at least 30 minutes. Slice rolls in half horizontally, and brush cut side with remaining olive oil. Place on shallow pan and broil until golden. Spoon 2/3 cup of tomato mixture on rolls, dividing evenly. Top each with 2 slices prosciutto, 1/4 cup of mozzarella and then rest of tomato mixture. Broil until cheese melts, about 3 minutes. Serve immediately. Makes 4 servings.
This will keep one more day, after that it gets soggy and mushy. Soooo, then IF you have any left over, toss in some Italian seasonings, puree and add to marinara sauce or throw in some red wine vinegar and puree for tomato salad dressing. Viola, a new creation!
